    graham cracker crumbs, divided
  • 1/2 cup
    butter or margarine, softened (1 stick)
  • 1 cup
    granulated sugar
  • 1 Tbsp
    water
  • 1 tsp
    vanilla extract

  • 1 cup
    all-purpose flour
  • 1/2 tsp
    salt
  • 1/4 tsp
    baking soda

Heat oven to 350°F. Remove wrappers from chocolate bars. Break into pips and set aside. Cut each marshmallow in half and set aside. Place 1/4 cup graham cracker crumbs in a small bowl and set aside.

Beat butter, sugar, water and vanilla in a large bowl until well blended. Add egg and beat well.

In a separate bowl, stir together flour, 1 cup graham cracker crumbs, salt and baking soda. Gradually add to sugar mixture, beating until well blended.

Roll dough into 48 equal balls (about 1 inch). Roll in reserved graham cracker crumbs. Place balls on ungreased cookie sheets or line with parchment paper.

Bake for 6 to 7 minutes. Remove cookie sheet from the oven and top each cookie with a marshmallow half, cut side down. Continue baking for 4 to 5 minutes, or until marshmallows are puffed, but not browning, and cookie edges are set. (Total bake time should be about 11 minutes.)

Remove the cookie sheet from oven and cool for 2 minutes. Gently press a chocolate bar pip into the center of each marshmallow. Cool slightly, then use a spatula to transfer the cookies to a wire rack. Cool.

Tip

These cookies taste best when slightly warm and the chocolate is soft. Cookies can be warmed in the microwave at MEDIUM (50%) for about 5 seconds.
