Beat butter, granulated sugar, brown sugar and vanilla until creamy.
Add egg and beat well.
In a separate mixing bowl, stir together flour, baking soda and salt.
Gradually add flour mixture to the butter mixture, beating until well blended.
Stir in chocolate chips.
Chill for 20 minutes to make dough easier to work with.
Preheat air fryer to 350°F for 5 minutes.
Divide cookie dough into 12 equal balls.
Break HERSHEY’S Milk Chocolate Candy Bars in half. For each mini pie shell, break each half into smaller pieces and place in the pie shell.
Top with 1/4 cup mini marshmallows.
Flatten a portion of the cookie dough between your hands to make a circle big enough to almost cover the mini pie. Place the dough over the shell, gently shaping it over the filling (it doesn’t have to completely cover the edges).
Place pie in preheated air fryer. Bake for 5 to 7 minutes, until the cookie is golden brown. Carefully remove from the air fryer basket and allow to cool for a few minutes before serving. Repeat with the remaining pie shells. Makes 12 mini pies.
Bake times will vary on different air fryers, so please keep an eye on your pie!
Make-ahead directions: Assemble pies as directed. Freeze unbaked pies in an airtight container for up to 1 month. Preheat air fryer to 350°F. Place frozen pie in air fryer basket and bake for 6 to 8 minutes, or until cookie is golden brown. Let cool for 2 minutes before serving.
