Heat oven to 350°F. Line cookie sheet with parchment paper.
Coarsely chop peanut butter cups, set aside.
Beat together sugar substitute, butter and peanut butter. Add egg, heavy cream and vanilla. Beat until light and fluffy. Stir almond flour and salt with a fork or whisk, making sure to break up any lumps. Fold almond flour mixture into batter until well blended. Fold in peanut butter cup pieces.
Drop heaping tablespoons onto prepared cookie sheet. Flatten tops just slightly.
Bake 10 to 12 minutes or until edges are light brown. Cool 5 minutes then remove to wire rack. Cool completely.
