  • 1 1/2 tsps
    instant espresso powder
  • 1 cup
    boiling water
  • 2 1/2 cups
    granulated sugar
  • 1/2 cup
    vegetable oil or melted coconut oil
  • 1 Tbsp
    vanilla extract
  • 2 1/2 cups
    all-purpose flour
  • 1 1/2 tsps
    baking powder
  • 3/4 tsp
    salt
  • powdered sugar (optional)

Heat oven to 325°F. Grease and flour 13x9x2-inch baking pan with all-vegetable shortening.

Whisk together cocoa, espresso powder and boiling water in a large bowl until smooth. Add sugar, oil and vanilla ; whisk until well blended. Stir together flour, baking powder and salt; fold into chocolate mixture.

Bake 35 to 45 minutes or until edges pull away from the pan. Remove from oven and cool completely in pan on wire rack. Cut into bars. Dust with powdered sugar, if desired.
