Heat the oven to 350°F. Coat a 9 x 5-inch loaf pan with cooking spray or shortening.
Blend the cottage cheese, milk and lemon juice in a food processor or blender until smooth and set aside.
Whisk the flour, baking soda, baking powder, salt, cinnamon and nutmeg in a medium bowl and set aside.
In another medium mixing bowl, beat the eggs with the sugar, oil, zucchini and vanilla. Add the flour mixture, mixing until the flour is incorporated. Do not overmix. Stir in the cottage cheese mixture with a spatula and then fold in the chocolate chips. Transfer the mixture to the loaf pan.
Coconut or avocado oil can be substituted for vegetable oil.
Bake for 50 to 60 minutes, or until a wooden pick inserted in the middle of the bread comes out clean and the top is browned. Cool for 15 minutes in the pan, and then remove the bread from the pan. Cool completely on a wire rack.
If the center needs to bake longer, but the top is already brown, cover loosely with aluminum foil to prevent burning.
