These delicious homemade date bars are versatile enough to snack on from breakfast to dessert. Dates add a sweet chew to the crunch of pistachios and almonds, with a hint of ginger and toasted sesame seeds. And the whole thing comes together without any baking or oatmeal. They’re a great sweet and salty snack for any occasion.
Butter 8-inch square pan. Line bottom of pan and sides with parchment paper; set aside. Stir together cookies, pecans, pistachios, dates and ginger in large bowl; set aside.
Remove wrappers from chocolate bars; coarsely chop into pieces. Place chocolate bar pieces, butter and honey in large microwave-safe bowl. Microwave at high (100%) 1 minute; stir. If necessary, microwave at high an additional 15 seconds at a time, stirring after each heating, until chocolate is melted and mixture is smooth when stirred. Pour over fruit and nut mixture, stirring to coat well. Add sesame seeds.
Press mixture into prepared pan. Sprinkle about 1 teaspoon each of sesame seeds and chopped pistachios over top surface. Cover; refrigerate about 2 hours or until set. Remove from pan; cut into squares. Store bars in refrigerator until just before serving.
